Mandapa, Ubud: Kubu and its 2 tasting menus
Kubu at Mandapa, the bamboo restaurant of the Ubud resort, cooks zero-waste with ingredients sourced within 100km. People come for chef Eka Sunarya’s 2 tasting menus, built on fish from local fishermen and produce from organic farms nearby.

The choice, in short
Why choose Mandapa
Kubu has 9 private cocoons, set apart from the rest of the room: if you want one, say so when you book.
Zero wasteWhen to look elsewhere
For Indonesian heritage dishes, or for lunch, Sawah Terrace is in the same resort: Kubu serves tasting menus only.
The 2 menusWhat goes into the kitchen
Eka and his team forage for rare or overlooked ingredients: wild herbs, exotic fruit such as palm fruit, unusual vegetable varieties. The menu changes regularly with what the season brings.5
Eka Sunarya comes from the village of Buahan, in Gianyar, and grew up with his mother’s cooking of local ingredients and traditional recipes. He was on the team that opened Mandapa in 2015; after W Maldives, a resort in Jimbaran and Buahan, a Banyan Tree Escape, he came back in 2023 as executive sous chef.4
To drink there are wines, cocktails made with local spirits and foraged botanicals, and alcohol-free drinks of Bali’s tropical fruit and herbs; many use house-made ferments and infusions.5
The Alsace wine dinner
- From Alsace to Bali
On Friday 20 November 2026 Eka’s dishes come with the wines of Domaines Schlumberger: Riesling, Pinot Gris and Pinot Noir. It is IDR 2,200,000 a head, wine included, plus 10% service and 11% tax.1
- First or second seating
The first seating sits at 5.30pm, 6pm or 6.30pm, the second at 6.30pm, 9pm or 9.30pm; booking is on SevenRooms.1

Where the scraps go
In the kitchen
- Vegetable scraps become broths.
- Fruit peel becomes garnish, and seafood shells go back on the plate.
- What is left goes to compost, which feeds the restaurant’s herb garden.
