Matteo Temperini leads the kitchen, drawing on Tuscan suppliers and the estate’s organic kitchen garden.¹

The restaurant takes its name from the estate’s leading Brunello di Montalcino cru.²

The cheese selection comes from small Italian producers: goat’s, sheep’s and cow’s cheeses, including blue cheeses and a range of maturities.²
