Once the calendar runs out, the hotel still has Café Beau-Rivage, every day, and Kaigan’s Japanese cooking, Tuesday to Saturday.

After Pic

The Coast, course by course

  • Oyster

After the amuse-bouche4 comes the Tarbouriech oyster, with dulse seaweed and Petite Arvine chutney, horseradish cream and bay leaf foam.

  • Arctic char or sea bass

Arctic char4 with fennel from Bremblens, or for CHF 70 more the Tsar Impérial sea bass, as her father Jacques Pic liked it in 1971.

  • Veal or venison

Veal4 with blackcurrant leaves, or wild venison rack with black garlic, coffee and smoked vanilla.

  • Tête de Moine, then a dessert

The cheese4 comes with a Mont Blanc tartlet, then you choose among apple, chestnut, white millefeuille and Sambirano chocolate.

  • The Summit

The 8-course menu4 adds the blue lobster from Brittany, with compressed carrots and a rosemary beurre blanc.

Questions about Pic in Lausanne

Can you eat at Pic without staying at Beau-Rivage Palace?

Yes. Tables are sold to anyone3, and a stay plays no part in the booking.

Is the restaurant open on Sundays?

No. Sunday and Monday stay shut3 every week to the end, and Tuesday is open; a listing with a Sunday lunch has the wrong days.

Why is Anne-Sophie Pic leaving?

The contract ends6 after 17 years, and the hotel wants a kitchen run by its own teams.

Pick a date from Tuesday to Saturday, and book it before the calendar runs out
