The choice, in short
Why choose Fairmont Le Château Frontenac
A planned celebration over Québec cooking and a view of the St. Lawrence.
Menu pricesWhen to look elsewhere
The Discovery menu, cheese and pairings each have their own price; à la carte gives you another way to order the meal.
Other venuesA dinner following the St. Lawrence
Champlain is the Château’s signature restaurant, with a menu shaped around the river and Québec’s farms.
The room looks over the St. Lawrence, and the river is also the menu’s organising idea. Chef Tristan Ratcliffe-Lambert’s introduction follows it from the Gulf towards the interior, through fishers, farms, market gardens and artisans. That gives a diner a useful way into the list: look for the fish and sea vegetables, then the ingredients from the land alongside them. The hotel’s own pages identify Champlain as the signature restaurant and name the current chef.
The Discovery menu is the clearest way to give the kitchen the evening. It has 5 courses, with 2 sequences printed side by side. One runs through leek, veal, halibut, beef and River Stone; the other lists leek, gnocchi, maitake, tortellini and River Stone. The menu gives ingredient and allergen symbols with the dishes, so discuss the sequence and any dietary requirements with the team when reserving. A Québec cheese selection is offered as an additional course.
Pairings change the total substantially. The Discovery pairing adds C$135, the zero-proof journey C$105 and the Prestige pairing C$195 to the C$165 menu, on the list read on 17 October 2026. Cheese adds C$15. These are additions to choose deliberately: someone coming for the food can order the menu first and select drinks separately, while someone who wants a pairing should budget for that choice from the start.
À la carte lets the same table build a different meal. A starter of mackerel comes with leek, sunflower, dulse and lovage; lobster has peach, fennel and habanero. Veal uses green sea urchin, tomato, charred onion and kombu, while maitake mushrooms bring stout, soy and seaweed. These combinations put the river beside vegetables, fruit and fermented flavours. Choose the starter that appeals before deciding whether the main should follow it with fish or meat.
The main courses include trout with gnocchi, mussels and corn; striped bass with caviar, beurre blanc, salsify and a quenelle; and halibut with chanterelles, prawn and XO sauce. Meat moves from suckling pig with peas and lovage to beef with celery, kombu, black garlic and miso. Tortellini with grilled broccoli, pine nuts and rocket gives another route through the menu. The dishes are individually priced, so the à la carte meal can take the shape you want.
There are plates to share too. The St. Lawrence Discovery Platter brings mussels, ceviche, shrimp, gravlax and oysters, while the maritime oysters come as a dozen from the chef’s daily selection. Lobster Wellington is served with lobster-butter hollandaise and grilled lemon; the prime rib steak comes with bordelaise and chimichurri. The menu also lists a daily catch at market price. Ask the team about the portion and the day’s fish before treating a sharing dish as a fixed meal for the party.
Dessert keeps the menu’s interest in local ingredients and sea flavours. Galet combines buckwheat, Bassan chocolate, wakame and verjus. Squash brings vanilla, graham, autumn spices and sea buckthorn, while Honey uses blueberries, bergamot and pollen. A Québec cheese selection comes with fruit paste and honey, and mignardises can be ordered as 3 or 5 pieces. These are separate à la carte finishes; the Discovery menu has its own last course, River Stone.
Sunday has a different meal. The hotel offers brunch in the historic restaurant at C$95 per adult, with tax and service extra, and the official schedule lists Sunday from 10am to 1pm. Dinner runs on the Tuesday-to-Saturday schedule. Choose the service that fits the occasion: the multi-course evening meal and the Sunday brunch are separately advertised bookings, with their own menus and prices.
