The email
There is no online booking: write to restaurant@passalacqua.it or call +39 031 44311 (contacts). In August 2026 a couple booked lunch “with a quick email to reception”, no room needed (Google reviews).
Passalacqua’s restaurant has no name of its own: it is the villa’s kitchen, run by the chef Viviana Varese, and since November 2024 it has taken non-residents too, by email or phone. The bar, the pools and the gardens stay with hotel guests.

You want a long lunch on a lakeside terrace in a famous villa, or the cooking of a chef starred in Milan, without booking a room.
PricesYou want a starred dinner with a published menu: Il Sereno Al Lago, across the water, holds a star and prints its prices, and Villa d’Este’s Veranda, 7 minutes away, does too.
Other restaurantsThe cooking looks back to the cooks who followed noble families to their lake villas for the summer, and forward to a chef who won her star in Milan.
Viviana Varese, whom the hotel calls its “chef di casa”, was born in Maiori on the Amalfi Coast in 1974, opened Alice in Milan in 2007 and took her first MICHELIN star there, which the hotel dates to 2009 and she, in an interview, to 2012 (Voices, Identità Golose). She has led Passalacqua’s kitchen since 18 March 2024 (Identità Golose).
The hotel calls it “grand villa cuisine”: the monsù tradition and 18th- and 19th-century aristocratic recipes beside her own dishes, such as her mother’s pasta e patate (Taste, Voices). The printed dishes include lobster with Marsala, sole meunière, a timballo of maccheroni “alla Bellini” and a Beef Wellington carved from the trolley (CiboToday, Scatti di Gusto).
Much of it comes from the grounds: eggs from the hens that scratch about by the lake, jams from the orchard, tomatoes from the kitchen garden beside the bocce court (2026 article, gardens). In autumn a menu follows the Alba white truffle; in 2024 the game and truffle dinner cost €210 a head, plus truffle by the gram (autumn, menu).
Until autumn 2024 the restaurant was for residents only; CiboToday reported its opening to outside guests on 16 November 2024 (CiboToday). Several sites still give a “smart and elegant” dress code, Google’s summary among them, while the hotel answers that none is required (Alotea, hotel’s answer).
How a meal goes for someone not staying, from the hotel’s pages, its replies to guests and what diners wrote, read on 4 and 5 October 2026.

Outside tables depend on availability: in April 2025 the hotel replied that it takes no outside guests when it is full, and in August 2025 that it closes on exclusive-use days (replies). Walk-ins have been turned away at the gate.
In September 2026 a non-resident was asked to explore the grounds before sitting down (Google reviews); the gardens step down 3 hectares of terraces to the lake (gardens).
Lunch is on the restaurant terrace, the bar terrace or in the garden; at dinner add the candlelit terrace, a pergola, the Sala Ovale under its frescoed gods and the smoky-blue dining room (dining, exclusive experiences).
Non-residents choose one of the 4- or 5-course tasting menus, the hotel answered on Tripadvisor (answer); lunch and dinner run different menus that “change often” (Scatti di Gusto).
In June 2026 a diner paid €250 a head before drinks; in September 2026 another quoted €80 for a starter (Google reviews). The bar, the pool bar and the gardens are for hotel guests, so the visit ends at the table (replies).
Villa d’Este’s Veranda is 7 minutes away by car; Il Sereno and the Mandarin Oriental face Moltrasio across the water; La Terrazza and Mistral are in the middle of the lake.
