Akira Back came to the Middle East for the first time with W Dubai – The Palm, by the hotel’s account.
The hotel describes Akira Back as a professional snowboarder turned chef, who brought his Japanese cooking with a Korean essence to the Middle East here for the first time. When W Dubai – The Palm opened on 4 February 2019, W Hotels presented it with destination restaurants led by Massimo Bottura and Akira Back.
The room is built around the view: raised alcoves and a terrace over the skyline, says the MICHELIN Guide. The hotel adds the vortex at the entrance, the chef’s mother’s artwork, wabi-sabi finishes and a private dining room for omakase; What’s On counted 2,500 tiles in her mosaic above the sushi counter.
The restaurant says the MICHELIN Guide recommended it in 2022, 2023, 2024 and 2025, and the guide’s own page still lists it, without a star. Marriott adds What’s On’s 2025 award for favourite fine-dining Japanese and the Good Food Awards’ restaurant of the year for 2024; the Saturday brunch, run with Candypants, won party-brunch awards in 2022, 2023 and 2025.
In 2026 the restaurant leans on fixed prices: the 3-course Back at 6 at AED 249, Monday’s Ladies Night from AED 169 and the brunch from AED 435. On Tripadvisor 1,313 of its 1,429 reviews are “excellent”; the recent ones praise the sushi, the black cod and named waiters.

You reach the dining room on the fifth floor through a tunnel of light the hotel calls a vortex; inside, cloud-like shapes on the ceiling and tiger stripes for the chef’s zodiac sign.

Above the counter hangs a mosaic of 2,500 tiles made by the chef’s mother, a piece he puts in all his restaurants, according to What’s On.

The hotel names the tuna pizza and the AB tacos as the signatures; the MICHELIN Guide calls the rock shrimp tempura and the king crab fried rice must-tries.

The terrace looks over Palm Jumeirah and the Dubai Marina skyline, by the restaurant’s own account; the MICHELIN Guide lists it as good for outdoor dining.
