Sambuseh, aubergine and jewelled rice

  • Sambuseh: ground lamb with candied orange peel, raisins, herbs, filo pastry and pistachios, with a citrus-rosewater dip.
  • Kashk e Bademjoon: eggplant with cured whey, fried mint, garlic, walnuts and crispy onions.
  • The 24K Gold Jewelled Rice combines barberries, pistachios, almonds, orange peel, cinnamon and saffron.
