Other palace tables

The first floor for the sauces, the seventh for the view

Arnaud Donckele’s name is on 3 of the 4; the fourth is Italian.

Plénitude is Arnaud Donckele’s restaurant on the first floor. Its page credits it with 3 Michelin stars, 5 toques and 19/20 from Gault & Millau. The cooking starts from the sauce: Donckele calls his sauces ‘Absolute Blends’, there are about a hundred of them, some made of as many as 12 ingredients, and each dish is composed to suit its sauce. He offers 2 menus. Symphony, 6 acts chosen by the kitchen, costs €495. Sail Away Together, 3 savoury dishes and one sweet of your own choosing, with the cheese cellar, costs €475. Wine pairings poured in tasting glasses are €195 or €495. Both menus change with the seasons.

Hakuba is the Japanese restaurant, listed with 2 Michelin stars and the work of Donckele with chef Takuya Watanabe and pastry chef Maxime Frédéric. It serves one menu, Yume, at €420: kaiseki-sushi in which broths and dashi come before sea bream, squid and bluefin tuna, with sake and tea alongside. A sea urchin temaki adds €30 and truffle €95. The room is in dark woods, black walnut among them, and a stone and bamboo fountain runs at the entrance.

Le Tout-Paris is the brasserie with the terrace, one Michelin star, under executive chef William Béquin. On its à la carte menu starters run from €32 for leeks mimosa to €49 for a shellfish minestrone, and the foie gras macaroni with truffle and artichoke is €44. Individual main courses start at €38 for vegetables in a court-bouillon and reach €82 for sole meunière; the blue lobster grilled on the barbecue is €72. A further section, ‘On the table’, runs from €54 to €92 for lobster cabbage. Dishes to share cost more: a roast chicken with thyme is €142 and a veal rack €155. The Buissonnière set menu is €175, with 4 glasses of wine for €95 more, and its own small print gives it to dinner, Monday to Saturday, although the restaurant’s page describes it under lunch.

Langosteria, on the seventh floor, is the Italian one, given over to fish and shellfish: raw plates, charcoal grills and pasta, with a list of almost 900 Italian and French wines. The tasting menu, taken by the whole table, is €122 a person at lunch and €172 at dinner. From the carte, a red tuna carpaccio is €38, linguine with gambero rosso alla Nerano €48, linguine with Brittany blue lobster €82 and the tiramisù €24. The Plateau Royal, with king crab, blue lobster and 10 oysters, is €298, and whole fish is sold by weight, sea bass baked in salt at €160 a kilo.

In the Google reviews we hold, guests write mostly about the seventh floor. One who stayed several nights and wrote in June 2026 found the French restaurant up there excellent and Langosteria ordinary, with unfriendly service; a diner writing in December 2025 had a birthday lunch at Langosteria and praised the food and the service alike. A guest writing in April 2026 called Plénitude and Hakuba fantastic and still gave the highlight to breakfast, for its eggs and its waffles. A guest writing in July 2026 about a visit in May went up to the restaurant and bar every night at 10.50pm to watch the Eiffel Tower sparkle. A diner writing in August 2026 gave one star after being told not to take photographs from the table.

7 things to settle before you book

  • Read the closures

On 11 October 2026 the dining page still listed the summer breaks: Plénitude from 2 August to 1 September, Hakuba from 19 July to 25 August and Langosteria from 3 to 23 August. The page prints no year, and the weekdays it gives match 2026. Le Tout-Paris is listed as open every day.

  • Say what you cannot eat

Plénitude asks for allergies and intolerances with the reservation. Hakuba’s menu rests on seafood, soy, gluten and fish, raw and cooked, and its page says the kitchen makes no exceptions.

  • Expect one menu at Plénitude

For a reservation of 5 people or more, Plénitude proposes a single menu, composed for the whole table.

  • La Table Ruinart

During Art Basel Paris the hotel’s salons host masterclasses, lunches and 7-course dinners by Arnaud Donckele, each paired with Ruinart Champagne. They have a booking page of their own.

  • Go up to the bar

The bar at Le Tout-Paris takes no reservations and serves from noon to midnight: cocktails at €32, alcohol-free ones at €22, a poultry club sandwich at €42 and the house burger at €45.

  • Lunch at the family table

Les Dimanches du Tout-Paris costs €160. Roasted sole adds €45, the rib of beef to share €50 and the cheeses €15.

  • Breakfast is for hotel guests

Le Tout-Paris serves breakfast from 7am to 10.30am and describes it as being for guests of the Maison. The menu is headed €78; a glass of Champagne with it is €28.
