La Réserve Paris: Le Gabriel Paris, menus and prices

Le Gabriel in Paris has held 3 Michelin stars since 2024: it is La Réserve Paris’s fine-dining room, where Jérôme Banctel cooks a contemporary journey from his native Brittany to the far side of the world.

Le Gabriel’s empty dining room, with round tables, white linen, fireplace and gold walls.

The choice, in short

Why choose La Réserve Paris

Sauces made without butter or cream: with cooking in limestone, they are the 2 techniques every Banctel dish is built on.

When to look elsewhere

It opens Monday to Friday only, so a weekend dinner means booking somewhere else.

How Banctel cooks

Every Banctel dish starts from seasonal produce and from a story of his life, in which each course is a chapter.1

Virée at dinner brings smoked Breton octopus with pickled vegetables and soft tielle, John Dory with a bundle of green beans, seaweed and fried capers, squid tagliatelle with duck jus and Kristal caviar, Breton quail with crisp black rice, and to finish a Williams pear in limestone with cacao mucilage sorbet.4

Périple brings abalone with Kristal caviar and lentil salad, flame-grilled salmon with sweet potato and herb tabbouleh, langoustine with cauliflower semolina and spiced sabayon, Wagyu beef with potatoes in limestone and nori, then plum, purple shiso and sake lees ice cream.5
