Arva at Aman Tokyo centres its Italian cooking on the harvest: seasonal produce from farmers, fishermen, markets and suppliers shapes the dishes. Chef Masakazu Hiraki leads the kitchen, with recipes grounded in Italian tradition. The dining room’s tall windows put the skyline around the tables. Choose it when you want a full lunch or dinner with that outlook, and make the course length part of the booking: dinner course orders close earlier than the à-la-carte menu.
The linked Arva lunch menu gives a concrete view of the food. Terra combines a starter, a choice of fish or meat, dessert and coffee or tea. The menu read on 16 October 2026 includes conger-eel soppressata with lotus root and herbs, followed by swordfish with tomato and prawn or sautéed Oita chicken with turnip and polenta. Tiramisu finishes that sequence. The seasonal dishes are examples from the current linked menu, so choose by the style of cooking as well as by the view.
Musashi by Aman puts a hinoki cypress counter between diners and the chef. Its omakase is based on the fish and seafood selected at the market that morning, with sushi rice the chef grows himself. The restaurant describes Edomae techniques such as marinating in soy, simmering and curing with salt and vinegar. This is a meal for someone who wants to leave the order with the chef and follow that sequence, with the shared counter an important part of the experience.
The official Musashi reservation page read on 16 October 2026 lists an Omakase Course at ¥51,040, including service and tax. It includes tsumami appetisers, 10 nigiri and miso soup. An option with 6 sakes is ¥76,560 including service and tax. The displayed validity covers 1 April–22 October, then 27 October onwards; the sake option also excludes 24–25 December. The booking page limits the table to 2 hours, requires a credit card, and charges 100% for cancellation within 24 hours. Those conditions make it a deliberate appointment to place in the trip.
Musashi also asks diners to avoid perfume, keep phones silent and refrain from calls in the restaurant. It cannot accommodate restrictions involving core ingredients such as raw fish, seafood, rice or vinegar, and outside drinks are prohibited. Children must be 13 or older. Read these conditions as part of choosing the meal: a person whose diet excludes those ingredients needs another restaurant, while a family with younger children can choose a different Aman Tokyo table.
The Lounge by Aman is designed around the idea of a shoji paper lantern, with floor-to-ceiling windows high above the Imperial Palace Gardens. It offers all-day dining, afternoon tea and cocktails, with bento boxes, sandwiches, salads and a Wagyu burger among the food named on its page. Its hours are 11am–10pm, with afternoon tea from 11am–4.30pm. Choose it for a less tightly sequenced meal or tea with the view, reserving the actual occasion through the lounge’s own link.
The Café by Aman sits outside the hotel among the trees of Otemachi Forest. French-inspired cooking appears as seasonal tasting menus and à-la-carte choices, with pastries and teas for a lighter visit. Its page offers the terrace in warmer months and describes a wine list with more than 30 labels. Lunch is 11am–2.30pm and dinner 5pm–9pm, with last orders at 8pm. The setting is the reason to choose it when you want the trees around the table after a day in the city.

Musashi makes the craft part of dinner

The photograph shows Musashi’s hinoki counter, trays laid out and the chef at work. The restaurant describes hand-made pottery for its sushi plates and sake cups, alongside bespoke lacquered boxes for fish and sushi. The chef’s rice-growing and original sake give the meal a connection to ingredients beyond the counter itself. Book this table when watching that work is part of what you want from dinner, while keeping the age, ingredient and timing policies in the plan.
