Bellagio’s own breakfast page lists LAGO, Spago and Sadelle’s among its morning tables, and each of the 3 calls the service brunch on its own page; so does The Buffet. All were read on 11 October 2026.

Sadelle’s Café is the room that looks onto the Conservatory & Botanical Gardens, and it says brunch is served all day. The menu is a New York one: the Sadelle’s Tower of fish with tomato, cucumber, capers and a bagel, plain, everything, sesame or cinnamon raisin; house salmon or smoked Scottish, whitefish or tuna salad; eggs Benedict with salmon or ham, cheese blintzes, blueberry pancakes, a grapefruit brûlée. The set called Sadelle’s Vegas Breakfast puts a Benedict or an omelette with a Danish or sticky bun, fruit and a Bloody Mary or Mimosa. The second page is the lunch side: its starters are marked as available after 11am, and it goes on to triple-decker sandwiches and a rigatoni Bolognese the menu credits to the Carbone family.

Until 7 November Sadelle’s also cooks for The Garden Table, a table for up to 6 set inside the Conservatory’s harvest display; the page, read on 11 October 2026, says «Through November 7» and gives no year. Brunch there is $135 per person at one of 4 sittings, 8am, 10am, noon or 2pm; a reservation is required and the dress is business casual.

LAGO is the Italian restaurant facing the fountains, and the only one of the 4 to serve brunch on the lake every day. Its brunch menu mixes a short list of morning dishes with the house pizzas and pastas: a ricotta pancake with lemon zest and blueberries, brûlée French toast with vanilla mascarpone, eggs Benedict on a croissant with prosciutto and Calabrian hollandaise, steak and eggs with an 8oz skirt steak. A breakfast list with avocado toast and a breakfast pizza is served only until 11am.

Spago, Wolfgang Puck’s restaurant, opens for brunch only from Friday to Sunday, and sells it as a party on the fountain side, with a DJ. Its brunch menu runs from breakfast pastries and a smoked salmon pizza to steak and eggs with American Wagyu, huevos rancheros and a Wienerschnitzel, with Kaiserschmarrn among the desserts. Drinks include a bottomless list priced per person, rosé, Moscato d’Asti, a mimosa you mix yourself or rosé Champagne, and 3 cocktails the menu calls «Trees»: Espresso Martini, Margarita and Sangria. Of the 4, Spago sets the most demanding dress code.

The Buffet is brunch by the plateful: live cooking stations, Italian, Japanese, Chinese and American dishes, pastries and a gelato stand. Parties of 15 or fewer walk in without a reservation. On Saturday and Sunday the room carries on after 2pm as a dinner, seafood on Saturday at $69.99 and Sunday dinner at $59.99; from Monday to Friday it closes when brunch ends.

In the reviews we hold, Sadelle’s is the breakfast guests name: 7 of the 509 mention it between July and October 2026, 5 of them for breakfast, one calling breakfast there «a must». The Buffet divides people. One guest in August 2026 found its breakfast superb and full of choice; another the same month thought it «overpriced», sent readers to Sadelle’s at, they wrote, a third of the price; a third judged it good and still not worth $56, a figure that is theirs. 2 guests, writing in August and September 2026, describe long waits for a table at a sit-down breakfast, 45 minutes in one case; neither says in which restaurant, and the second was recalling a winter stay.

The pages read tie none of these brunches to a room rate. A guest who booked through American Express Fine Hotels + Resorts wrote in August 2026 that the programme’s daily breakfast credit could not be spent on room service. The hotel guide covers the rooms, the fountain views and what they cost on dated nights.
