Which Bellagio restaurant to book

Book the lake

You want dinner with the fountains beyond the glass and a dress code to match: coastal Italian at Carbone Riviera, Wolfgang Puck’s California cooking at Spago or a 36oz porterhouse at PRIME, then breakfast at Sadelle’s overlooking the Conservatory.

The list

When to look across the road

You want a buffet dinner on a weekday, a grand dining room with a child under 5, or the Michelin-starred names of old: the Buffet closes at 2pm from Monday to Friday, Carbone Riviera, PRIME and Jasmine admit no children under 5, and Picasso and Le Cirque have both closed.

From Picasso to Carbone Riviera: how Bellagio’s tables changed

Bellagio opened on 15 October 1998 with 16 places to eat, and its first chefs helped turn the Strip into somewhere people travelled to for dinner.

The opening list was ambitious. Wikipedia records Julian Serrano’s Picasso, hung with the painter’s own canvases; Le Cirque and Circo, run by the Maccioni family of New York; Todd English’s Olives; Jean-Georges Vongerichten’s steakhouse, Prime; Aqua, a seafood room from San Francisco overseen by Michael Mina; a 500-seat buffet and a café open round the clock. Several had patios on the lake.

3 of those survive under the same roof: PRIME, the Buffet and Aqua, which took its chef’s name in 2004 and is now Michael Mina. The others were replaced one at a time: Circo by LAGO in 2015, Olives by Spago in 2018, the café by Sadelle’s in 2019, and Hyde, the lounge on the fountains, by the Mayfair Supper Club, which opened on New Year’s Eve 2019 (Wikipedia).

Picasso held 2 Michelin stars in 2008 and 2009 and a Forbes 5-star award (Wikipedia). When Bellagio announced its closure on 15 May 2024, Serrano also stepped back from LAGO’s kitchen (KLAS). The room became Carbone Riviera, a seafood-led version of the New York Italian, with a patio framed by the fountains (Carbone Riviera).

Le Cirque, the last French dining room from 1998, served its final dinner on 23 August 2026, after a summer of farewell menus at $185 to $310 (Eater Vegas). On 4 October 2026 its old address on Bellagio’s site led back to the dining list, while Wikipedia still named it among the resort’s notable restaurants.

Buffets and fountain views across the road

When Bellagio’s own list does not fit the evening, 3 neighbours fill the gaps.

Bellagio’s Buffet stops serving at 2pm from Monday to Friday. On those evenings the Bacchanal Buffet at Caesars Palace, across Flamingo Road, was open until 10pm on the day we read it, with 10 kitchens and more than 250 dishes; Wicked Spoon at The Cosmopolitan, next door, serves only from 8.30am to 1.30pm. For the fountains from above, the Eiffel Tower Restaurant at Paris Las Vegas sits more than 100 feet over the Strip, looking down on the lake.

On Google, on 4 October 2026, the search opened on a map of LAGO, Spago and Sadelle’s and an AI summary. The results below mixed Las Vegas with Bellagio on Lake Como and a Bellagio restaurant in Philadelphia, and in the first 25 none came from the resort’s own site (Google).
