Atlantis Paradise Island: Nobu, Japanese dining by the casino in the Bahamas

Nobu at Atlantis in the Bahamas is chef Nobu Matsuhisa’s restaurant inside the Paradise Island casino. The cooking joins Japanese tradition to Peru and Europe, the stops of the chef’s own life, and the sushi comes with a sake cellar alongside.

The choice, in short

Why choose Atlantis Paradise Island

The sake: most of the list comes from Hokusetsu, the Sado Island brewery run by the Hazu family since 1871, and Nobu holds the exclusive rights to sell it.

When to look elsewhere

With children under 6, book a table before 6.30pm; later in the evening another of the resort’s restaurants suits better.

The chef and the Bahamas menu

Nobu Matsuhisa was born and raised in Japan and apprenticed in Tokyo’s sushi bars before leaving for Lima; Buenos Aires, Japan again, Alaska and Los Angeles followed, and there he opened his restaurant in 1987. In 1989 Food & Wine named him one of America’s 10 Best New Chefs.1

The Bahamas menu has its island plates: conch ceviche at $28, Nobu-style cracked conch at $28 and Bahamian lobster with wasabi pepper at $70.2

Japanese A5 wagyu is $44 an ounce: tataki or new style comes in 2 ounces at least, toban-yaki, ishiyaki or steak in 6.2
